ARTEMIS 2025

Artemis is our early harvest organic AOP Provence extra virgin olive oil, crafted each autumn at La Cavalerie by two generations of the Ungaro family.


Named for the goddess of the moon and the wild, Artemis reflects the character of the valley — light, structure, and intensity captured at the earliest moment of the harvest.


Olives are hand-picked in small batches and cold extracted within hours, preserving their freshness and natural concentration.


Produced once a year in limited volumes, Artemis is available directly through the estate and selected kitchens, including 19 Saint Roch and Le Doyenné. Served daily at La Cavalerie.

A cooler, more stable year with moderated humidity and fewer rainfall spikes. Cooler nights slowed fruit metabolism, yielding a fresh, well-defined oil with green aromatics and a clean, pepper-driven finish.


Varietal
Estate-grown Aglandau, cultivated across fifteen hectares in the foothills of the Luberon.


Terroir
The estate lies within a protected valley of the Luberon, where limestone soils, Provençal light, and prevailing winds shape the character of the oil. This environment gives Artemis its green aromatics, balance, and naturally high polyphenol content.
