Grown to the most demanding organic standards, La Cavaleries olive oil was awarded GOLD at the 2024 Concours Général Agricole in Paris.

OUR OIL

La Cavalerie olive oil is certified organic (ECOCERT) and holds the prestigious Protected Designation of Origin (PDO) for Provence. It has exceptionally low acidity (0.19%) and a high phenol content of 614.5 mg/kg.

The 65-hectare estate, a PDO terroir, with its red clay soil, clear, high air and constant aromas of lavender and thyme, provides the perfect conditions in which to grow olives.

METHOD

Our olives are hand-picked using traditional practices, ensuring minimal impact on the trees. They are then cold-extracted on the same day to preserve their rich flavour and nutrients.

LIMITED PRODUCTION

Each harvest is a limited and exclusive edition, averaging around 2,000 litres, bottled in 500 ml, recyclable tins - sold on our website and sent to the most prestigious kitchens and restaurants, including 19 Saint Roch in Paris.
