La Cavalerie, Emanuel Ungaro’s estate in the heart of Provence, is a former Knights Templar commandery from the 12th century which sits beyond an avenue of linden trees.
Olive trees of the Aglandau, Bouteillan and Cayon varieties have been cultivated and harvested for more than 20 years, producing an organic fruité vert olive oil.
Emanuel developed this olive oil in homage to his native Provence, a symbol of love for a fruit that embodies the generous lifeblood of a land blessed by the gods.
