Organic AOP Provence · Early Harvest Extra Virgin Olive Oil

Limited Annual Edition 2000 bottles

ARTEMIS 2025

Artemis is our award winning early harvest organic AOP Provence extra virgin olive oil,
crafted each autumn at La Cavalerie by two generations of the Ungaro family. Named
for the goddess of the moon and wild landscapes, Artemis reflects the spirit of the valley,
a sense of light, renewal and strength woven into each harvest.

Hand picked in small batches and cold extracted within hours, Artemis captures the character
of the valley in its most expressive form. Each harvest is produced once a year in limited volumes, available on our website and sent to some of the most prestigious kitchens and restaurants, including 19 Saint Roch and Le Doyenné.

One 500 ml bottle supports approximately one month of daily use for one person.

Complimentary shipping within Europe applies to orders of two bottles or more.

DETAILS

Tasting Notes
Green fruit · fresh herbs · luminous verdure · balanced bitterness · bright spiciness

Terroir
Our trees grow in a protected valley of the Luberon, where limestone soils, Provençal light, and prevailing winds shape the flavour of the olives. This environment gives Artemis its green aromatics, balance, and naturally high polyphenol content.

Climate Profile

A cooler, more stable year with moderated humidity and fewer rainfall spikes. Cooler nights slowed fruit metabolism, yielding a fresh, luminous oil with bright green aromatics and a clean, pepper-driven finish.

Harvest
Early harvest, hand-picked

15–25 October 2025

Varietal
Fifteen hectares of estate-grown Aglandau, cultivated in the foothills of the Luberon.

Certification
ECOCERT Organic · AOP Provence

Extraction

Milled within three hours of picking

Twenty-five-minute malaxation

Maximum temperature: 25 °C

Small-batch milling in the Luberon

Filtered

Polyphenols
553 mg/kg (high)

Sensory Profile (jury expert)
Fruitiness 6.5 · Bitterness 4.0 · Pungency 6.0

Storage
Store in a cool, dark place away from heat and light. Once opened, consume within four to six weeks for peak freshness and nutritional value.
